February 16-22 Mealplan

I don’t know why I picked this week, this day, to start publishing mealplans again.  (And my family reading this right now is like, What the heck is she doing?!) This may end up being the only one I post for months, but I just found myself doing it today for some unknown reason (I work better under stress and pressure I suppose).  I have been too busy since the birth of my daughter to think of posting our menus, but up until she was born I was doing it weekly. I’ve still been writing a lazy version of the mealplan at home on a regular basis, because I believe it’s the best way to stay organized and under budget, but never really had the urge (or time) to share them.  
 
So why today?  Who knows.  I’m a weirdo.  I’m sick, both my kids are sick, and we have all been that way for almost two weeks now. It’s just a bad, lingering cold, but in addition to his cold, my 4 year old son is having tummy troubles…along with the rest of my town. (Just Google North Mecklenburg Stomach Bug to see what I mean) We all three made it to the grocery store today, amidst the craziness that is Super Double Coupon Week.  And even through the snot, the coughs, and potential upchuck, I saved $107 and got my free milk, soy sauce, granola bars and guacamole.  I know this because the receipt says so but frankly, it’s all a blur.
 
So here’s the plan for this week (health permitting)…
 
*Spinach and Feta Stuffed Chicken Breasts with Roasted Asparagus
 
*Pan-Grilled, Bone-In Strip Steaks with Fried Plantains and Garlicky Refried Black Beans
 
*Cod Fish Tacos with Cucumber-Pomelo Pico de Gallo and Homemade Potato Chips
 
*Fennel-Rubbed Pork Sirloin Roast with Roasted Asparagus and Crispy Sweet Potatoes

*Linguini with Fresh Mozzarella, Prosciutto, Asparagus and Basil
 
*California Roll Chopped Salad over Sticky Rice Patties 
 
*Chicken and Broccoli Mac ‘n’ Cheese with Red Leaf Salad
