When I wrote this meal, I wasn’t quite sure what I wanted to make…(often times I never do)…I only knew that I wanted it to be a tart with potatoes, onions, and rosemary. This is what it turned out to be…and may I say, it was delicious.
I took a piece of store-bought puff pastry dough and rolled it out onto a greased cookie sheet. I topped it then with a thick sauce I made of fresh cherries, balsamic vinegar, sugar, s&p and butter. The next layer was mandolin-sliced potatoes. After the potato came some carmelized onions, blue-brie cheese and rosemary. Twenty minutes later, we enjoyed our tart with roasted asparagus and a lovely spanish Cava. Happy Thursday!

It's a little weird, I'll give you that! The potatoes might not have made the recipe if it wasn't for the fact that I have so many on hand. But it really added a wonderful texture to the tart. And I will definitely do it again.
