Bacon Cheeseburger Meatloaf with Fresh Tomato Topping

I’m not really a bacon fan. I know. I just got mentally trashed by most of you reading this. I just don’t like smokey stuff. Smoked salmon? Boo.  Smoked sausage? Eh.  Bacon? Unless it’s resting next to my fried egg and grits, I don’t really care for the stuff.  But I live in a house with two boys and boys just really like bacon.  Bacon Cheeseburgers to be exact.  And this meatloaf tastes just like a big, Bacon Cheeseburger.  I even got the tomato in there!  So, even though bacon isn’t really my thing, I created this recipe for my boys who love it so.  We ate ours with smashed sweet potatoes and roasted broccoli and it was a big hit.

I hope you enjoy it!  I hear it’s pretty good…

*Bacon Cheeseburger Meatloaf

-In a mixing bowl combine 1 lb of lean beef with 1/2 pkg of center cut bacon, cooked* and then chopped, 2 large eggs, 1/2 a small yellow onion, minced, 1/2 cup of raw oats, roughly 1/3 lb of cheddar, or your favorite burger-cheese, chopped or grated, about 1/3 cup of milk, and a couple good pinches of kosher salt and cracked black pepper.
-Mix with your hands until well combined, but don’t over-work it or your meatloaf will be too tough.
-Mold into a loaf shape on a greased, foil-lined cookie sheet.
-Top with 1/2 inch slices of fresh tomato (2-3 vine-ripe tomatoes will be needed), overlapping each slice to cover the top of the loaf.
-Sprinkle the tops of each slice with some kosher salt and a liberal amount of brown sugar.
-Bake at 375 for about an hour until firm to the touch.

(*I’m sure it seems silly to precook the bacon here, but I do that to render out unnecessary fat. Fat is awesome. Unnecessary fat is silly.)
