Pumpkin Spice Coconut Rye Waffles

I whipped these up for my kids the other day while they were sleeping.

Because sometimes I try to win mother of the year.

My daughter, at the dinner table the previous night, had blurted out that she wanted waffles for breakfast the next morning.

So, that is what she got.

I decided I wanted to make pumpkin waffles, and make them fairly healthy, so I just started playing around with ingredients and this is what I came up with!

At 5:00 in the morning.

I’m using coconut milk instead of regular dairy, and rye flour… they also don’t contain a ton of sugar, and pumpkin is just plain good for you, so these have a ton of nutritional value!  But they’re also really rich and dense and flavorful.  You can top them with maple syrup (the real stuff only please), or honey, or burn your mouth on them straight from the iron like I did.

It’s really all up to you.


makes 6 Belgian style waffles

In a large mixing bowl, combine the following wet ingredients…

  • 1 (14 oz) can full fat coconut milk
  • 1 cup canned, plain pumpkin puree 
  • 2 large eggs
  • 1/4 cup light brown sugar
  • 4 TB coconut oil (melted but cooled)

Beat with a whisk or electric beater until fully combined.

Mix the following dry ingredients in a medium mixing bowl…

  • 1 1/2 cup rye flour
  • 3 tsp baking powder
  • 1/2 tsp kosher salt
  • 1 tsp ground cinnamon
  • 1 tsp ground ginger
  • freshly grated nutmeg (I don’t measure nutmeg, as I always grate it fresh, but I imagine it’s roughly a scant 1/2 tsp.)
  • pinch ground cardamom 

Whisk to combine.

Whisk dry into wet.  Stir well.

Make waffles according to your waffle maker instructions, being sure to grease the iron and NOT OVERFILL IT like I do every single time.

Keep the beginning waffles warm while you’re making the later waffles by placing them on a parchment or wax paper lined cookie sheet and keeping them in a low, warm oven.

Serve warm with honey…

…or maple syrup.  Or however you wish.

(Note, that these don’t have the best staying power after a day or so, so either gobble them up straight away or freeze any leftovers immediately after cooling.)
