October 18-24 Mealplan

My son and I have been sick for most of the week and it has not been fun. I was up for 4 hours in the middle of the night, just staring at my ceiling. So please pardon the “wham, bam, thank you ma’am” style of this week’s mealplan. It’s a wonder I even made it out to the store today…
*Stuffed Pork Chops and Candied Sweet Potatoes
A bread stuffing flavored with apples, onions, celery and fresh sage…sandwiched between two super-thin, bone-in pork chops. That screamed candied sweet potatoes to me.
*Fried Chicken with Caramelized Onion, Currant and Pine nut Rice Pudding
Oven-‘fried’ chicken drumsticks and a savory rice pudding made with Chinese take-out rice.
*Bacon Wrapped Fillet Mignon, Scalloped Potato Gratin and Sauteed Spinach
Classic Steakhouse-style meal.
*Cumin-Lime Chicken Breasts and Avocado-Papaya Salad
I have no idea what this means yet.
*Papa Al Pomodoro and Mixed Green Salad
Italian tomato and stale bread soup. Super comforting.
*Moroccan Spice Rubbed Pork Roast with Mashed Chickpeas and Roasted Broccoli
Whenever the first of the season pomegranates come in I make this dish. The chickpea puree is garlic and orange scented and topped with the beautiful ruby jewels of the pomegranate. It’s delicious.
*Scrambled Cheesy Eggs, Bacon and Sourdough Toast
This will definitely be a ‘breakfast-for-dinner’ kind of week.
