Birthday Cake Batter Blondies

This is a very simple recipe.

Why?

Because you’re taking a very big shortcut to get to it.

Why?

Because you can, and you deserve a little extra time in your day for you.

I love baking things from scratch. I have a huge catalog of yummy scratch-made goodies on here. And I also am not above using a boxed mix to get things started sometimes. You won’t find me using a boxed mix as it was intended to be used… I won’t make a plain yellow cake out of a yellow cake boxed mix, but I will absolutely ‘doctor’ it up to use as the foundation for something fun and different.

My most famous doctored up box mix is probably the Campfire Brownies.

Those were a massive success and I just recently made them again – sooo good.

I think I find the boxed mix especially useful if I’m planning on creating a recipe that will have other non-scratch made add-ins. Like marshmallows… cookies, candies, sprinkles… It makes sense to me to just go all in on the convenience!

So for this new short-cut recipe, I bring you…

And… holy sprinkles, are they good. They’re so easy to throw together, so cute and pretty, and a huge crowd pleaser. Perfect for an Easter picnic potluck type of jammer, just sayin’…

It started with a sad little box in my pantry about to bite the dust, a tiny pocket of free time with shower hair, and another impromptu video where I made it up as I went along.

Birthday Cake Batter Blondies

Preheat your oven to 350.

In a mixing bowl, using an electric beater, mix the following :

  • 1 box yellow or butter cake mix (white cake mix will also work; it just won’t be as rich as white cake uses only the egg whites, while yellow uses the whole egg)
  • 1 stick unsalted butter or margarine, melted (this is 1/2 cup or 1/4 pound)
  • 1 large egg

Then add in and mix with a spatula or wooden spoon :

  • 1/2 cup white chocolate chips
  • 1/2 cup rainbow sprinkles
  • splash vanilla extract
  • a couple pinches of kosher salt

Spread into a greased 7×11 inch / 2 quart glass baking dish* (a 9×9 square dish can also work if that’s all you have! But the baking time will be a bit longer.. 5 minutes maybe.)

Bake at 350 for 28-32 minutes, or until a wooden skewer comes out clean when inserted in the center.

Allow to cool in the pan on a rack until you can touch it.

Slice into 12 squares.
