If you like it then you shoulda put an egg on it

Proof that anything can be turned into a meal if you put an egg on it.

(Also, I feel like I should just open up a new chapter of this blog titled ‘Eggs on top of things’.

I’m snowed in over here- with a very steep driveway covered in ice keeping my car in the garage.  So, when you’ve got a bunch of random leftover bits and you’re starving after a living room workout (because driveway ice) and you throw those bits together, they end up working.  As long as you egg it.

Who knew?

BRUSSELS AND GRAPES

OVER FRENCH TOAST

WITH CHÈVRE AND EGGS

All this is, is my leftover Challah french toast from a couple days ago (a.k.a best french toast), topped with leftover roasted brussels sprouts and grapes, (a.k.a my favorite veggie side dish) warmed in the oven… then topped with young goat cheese (a.k.a my favorite cheese) and a sunny side up egg (best thing ever).

That’s it.

It sounds weird probably.  But it wasn’t.  It was sweet and savory and rich and goopy and yummy and perfect.

So, let this be a lesson to you all.

Put an egg on something, anything, and it just works.
