Roasted Kale Chips

I didn’t make this one up, and many of you may already know about it.  Kale chips have recently become a bit of a food trend.  But just in case you haven’t been exposed to this idea, I thought I’d share it with you!  You’re making chips out of kale leaves…which sounds crazy, but it actually works.  And is delicious.  It’s so easy, barely a recipe, but here’s how you make them-

*Roasted Kale Chips

-Remove the stems and ribs from your kale and tear into pieces about twice the size of potato chips (they will shrivel and shrink once they cook)
-Spread out on greased cookie sheets, in one layer.  Drizzle liberally with olive oil and season with salt and pepper.
-Toss with your hands to combine and once every leaf is coated and back in one layer, place in a preheated 450 oven and roast for 5-7 minutes.  You may need longer, depending on how many cookie sheets you’re using, but check on it often and toss well.
-You want the leaves to turn brownish green, but not all the way brown or else they will become bitter.
-Allow to cool on the sheets and place in a bowl to enjoy just as you would potato chips.
-Store in an airtight container at room temperature for a couple of days.

    You know I had heard of them, but never have bought any. I froze some recently and ate them right out of the salad bag, they were good…I will have to try this.

    I have enjoyed grilled kale but, this is a whole new level. Very cool. A really healthy way to enjoy chips.
