Soo sleepy this week! I feel like I’m still playing catch-up from the birthday festivities of last week and every time I want a second to relax, something else falls on my plate! Ahh…the joys of being a pregnant, stay-at-home working mama! But I somehow managed to throw together a plan for this week while dozing off in bed last night. Here it is!

How do you make faux fried plantains? I'd love to make them without all that oil!
