December 16-21 Mealplan

Soo sleepy this week! I feel like I’m still playing catch-up from the birthday festivities of last week and every time I want a second to relax, something else falls on my plate! Ahh…the joys of being a pregnant, stay-at-home working mama! But I somehow managed to throw together a plan for this week while dozing off in bed last night. Here it is!

*Tomato Braised Chicken and Sausages with Spinach and Garbanzo Beans

*Brazilian Style Fat-Iron Steaks with ‘Fried’ Plantains and Garlicky Black Beans

*Dijon Pork Tenderloin with Raw Kale Salad

*Apple Cider Braised Brats with Cabbage, Onions and Apples

*Butternut Squash and Sage Lasagna with Green Salad

*Rosemary-Garlic Rubbed Rib Roast with Sweet and White Potato Gratin and Roasted Broccoli

    How do you make faux fried plantains? I'd love to make them without all that oil!
