I may be obsessed 

So. Clearly I eat a lot of eggy things. Lately it’s been my go-to second breakfast after my workouts. And usually I just grab whatever we have leftover in the fridge, add some eggs to it and gobble it up. Sometimes it looks disastrous. And sometimes it’s downright picture worthy.

Today I felt like my eggs deserved some attention.

This is a sweet potato that I baked yesterday but never got around to eating… A couple of eggs… And some leftover candied bacon I had from my gnocchi browns breakfast the other day.

And it was perfect.

BAKED EGGS IN SWEET POTATO

WITH CANDIED BACON AND HOT SAUCE


Bake your 2 large eggs in an opened, salted, baked sweet potato (the smaller ones are preferred for a single serving) in a 350 degree oven for about 20-25 minutes, or until the whites have set and the yolk is still soft.

Make sure to salt the eggs as well.

Top with candied bacon. After you eat the rest of it while the eggs bake.

Douse with hot sauce (I’ve been on a Cholula kick lately)

Devour. With power.
