I used this sauce on some whole wheat cheese ravioli last night and it was delicious. I’ve made many versions of pumpkin sauces, this is just what I came up with last night. It was extremely easy…
*(makes enough sauce for 1 pkg. of fresh ravioli)
-Finely mince and saute half an onion and half an apple in olive oil and butter until soft.
-Season with S&P and sugar.
-Add about 3/4 cup or so of plain pureed pumpkin.
-Season with a good pinch of nutmeg and orange zest.
-Add a handful of grated Asiago cheese (or something similar…parm or romano would work just fine).
-Pour enough cream or milk to make it creamy, then chicken stock to make it thin enough to be a sauce.
-Adjust your seasoning if neccesary…mine was equally sweet and savory.
-Toss with your cooked ravioli and I topped mine with toasted pine nuts.
