Tonight my husband cooks. I plan on doing as little as possible for the rest of this long and exhausting day. Thank goodness he’s an amazing cook, thank goodness it’s Friday, thank goodness it’s almost come-home time for him and the baby took a late nap and it still asleep. I’m on the couch with my oldest and we’re watching the Golden Girls with lots of pillows. Let’s just say I’m extra low on iron this week…
*Pan-Seared Bone-In Strip Steaks with ‘Fried’ Plantains and Garlicky Black Beans
*Pickin’ Pork, Corn Muffins and Slaw
(no you’re not having deja vu, we just never had this one last week.)
*Roasted Shrimp Nicoise Platter
(We have different versions of this meal often…I roast the potatoes, grape tomatoes and beans, and whatever meat I’m using, slice the hard-boiled eggs, and lay it all out on a pretty platter with some good olives and we all sit around the coffee table on the floor and eat from the platter. The kids love it!)
*Roasted Pork Loin with Roasted Broccoli and Sweet Potatoes
*Balsamic BBQ Ribs with Creamed Corn Mac ‘n’ Cheese and Roasted Brussels Sprouts
(I’m gonna play around with the mac ‘n’ cheese idea and post it if I can get it right.)
*Sausage and Greens Fritatta with Buttermilk Biscuits
(I use Alton Brown’s buttermilk biscuit recipe and tweak a couple things to make incredible biscuits, I should post that one too…)
*Fennel Dusted Chicken Cutlets with Zucchini and Mushroom Risotto
