No, I wasn’t under the influence of anything when I wrote this.
Ok, technically that’s not true. I was drinking wine in bed with my husband when the idea hit me.
But still. I’m sober as can be now and I’m still diggin’ this hard.
So I had my leftover meatloaf and mashed potatoes in the fridge and I wanted a fun and different way to use it up. I know meatloaf sandwiches are a thing, and I’m not saying that’s not a solid choice, but… this is how you bring that concept to breakfast.
Awhile back I created Mashbrowns (technically I just named them, after seeing a friend make breakfast potatoes out of his leftover mashers), so I just went with that concept here!
There’s not really a recipe needed for this… all you need is to have made Meatloaf earlier in the week, along with mashed potatoes, and have an egg on hand. That’s it.
Use a large ice cream scoop to easily get the right amount of mashed potatoes, and place in a hot skillet with some melted, then browned butter, then flatten it with a spatula. Have a fat hunk of meatloaf crisping by it’s side and cook both til golden brown, then flip to brown the other. Stack ’em up and top with a sunny side up egg. Salt everything and garnish with basil or parsley.
Done.
