January 5-11 Mealplan

I’ve been taking some much needed time off to recover from the holidays and although I’m not quite ready to say goodbye to my ‘vacation’ yet, I figured I needed to get ready for my busy week next week.
If you’re local to me and are a Harris Teeter shopper, this week is Super Double Coupon week, which means they will double any coupon you have up to $1.98. I recommend going if you are a coupon clipper…I went yesterday and saved $177 and got a ton of our staples for free. Coupons may seem like a bore and a waste of time to most people, but once you start seeing amazing results like I do, you may never go back!
Here’s the plan for the last week of my laziness…

*Mini Beef Wellingtons with Duck Mousse Pate and Roasted Cauliflower

*Brazilian Braised Pork Shoulder with ‘Fried’ Plantains

*Pan-Seared New York Strip Steaks with Roasted Garlic, Spinach Patties and Parsley Potatoes

*Sweet ‘n’ Sour Pork with Pineapple and Bell Pepper over Brown Rice (using pork shoulder leftovers)

*Pot Roast with Parsnips, Carrots and Potatoes over Sour Cream Grits

*Ginger-Orange Chicken with Raw Kale Salad

*Vidalia Onion Meatloaf with Sauteed Peas and Sweet Potato Gnocchi
