TWO INGREDIENT CHEATER ICE CREAM

Yeah, you heard me. Two ingredients and you’ve got ice cream. And you don’t even need an ice cream machine.

boomdiggity.

If you have a stand mixer, I highly recommend using that because you’re gonna be whipping cream here. No mixer? Use electric beaters and a big ole bowl. No beaters? Getchur delts ready for a solid whisk pump.

So, technically there are three ingredients if you count the vanilla extract, but I’ve forgotten that before and this is still killer. Also, you can swap in any extract or flavoring and make this whatever kind of ice cream you want! We’ve done peppermint extract + green food coloring + mini chocolate chips for Mint Chip. We’ve done crushed chocolate sandwich cookies for Cookies and Cream. We’ve done strawberry whole fruit preserves for Strawberry… maybe you’re like me and still swimming in leftover Easter candy / Halloween candy / Christmas candy (?) so just break it all up and throw it on in! Basically, this is your blank canvas ice cream, so just pick your fav flavor using whatever you have on hand.

All you need are :

  • heavy cream
  • sweetened condensed milk
  • (vanilla)
  • (salt)

Ok, four ingredients if you count the salt, but nobody counts the salt when you’re playing this game.

This stuff is pure magic and everyone I’ve made it for falls in love. It’s also so damn easy. So you really have no choice in the matter, do you?

Now make some ice cream for your family to enjoy this weekend! Start it today and it will be nice and firm for you when you’re ready for it. And I highly recommend your licking of both the whisk and the bowl when you’re done here. Because before this is frozen, it is delicious and delicately sweet and rich whipped cream that demands to be licked.

If you don’t come out of this situation covered in ice cream I will be very disappointed in you.

Two Ingredient Cheater Ice Cream

yields about 1 quart of ice cream, depending on your cream stiffness

In the bowl of your stand mixer, or a very large high sided mixing bowl, add the following :

  • 1 pint / 16 ounces / 2 cups cold heavy cream

Start slowly and begin to whisk / whip your cream. Once it begins to thicken, increase the speed slowly to prevent splatters.

Whisk / whip until you get beyond soft peaks, but before you get into stiff peaks. When you lift the whisk, the whipped cream attached to it should be firm but not chunky.

Add in :

  • 1 (14 ounce) can sweetened condensed milk
  • good splash of vanilla extract (or whatever flavor you’re choosing!)

Continue to whisk / whip until it’s completely mixed and smooth and creamy.

If you’re adding solid ingredients for your ice cream flavor, do so now by spatula and mix evenly.

Cover and freeze until solid – at least 8 hours. You can go on the lighter side of time and this will become a semifreddo, and it will be delicious… just a much softer ‘ice cream’. But the longer you freeze it, the more firm and ice cream-like it will be.

Make an Ice Cream Sundae party for the fam! Or… have them pick out their favorite flavors and stir it into smaller bowls before freezing… or surprise them with it on the same day you made a rando coconut cake like I did… just have you some sweet fun.
