This weekend was tough. And I need today to be a Sunday replacement. So I decided to take the time to share a supremely simple recipe for a delightfully delicious Fall cocktail.
It’s taking the classic Mimosa and making it feel a little bit cozier. Which is absolutely what I need right now. And maybe you do too.
I know I haven’t been here in awhile, and it’s only because I haven’t had the time for anything that requires me to single focus.
And sit still.
But I’ll take the little time that I have right now to say that I appreciate each and every one of you. And you are loved.
So grab ahold of someone you love- someone who inspires you, someone who builds you up- and cozy up with this Apple Cider Mimosa.
I made it just for you.
Apple Cider Mimosa
In a champagne flute, combine the following:
- 1 ounce apple cider
- 4 ounces cava*
- optional – 1 ounce of Calvados (apple brandy) if you’re feelin’ extra fancy
Drop in a cinnamon stick and every time you take a sip, you get a little added warmth from a whiff 😉
You can also adjust the amounts to make a large pitcher of these for a brunch party!!
And you’re all very aware that I don’t really measure things, so the Abbey translation for that recipe would be:
- splash of apple cider
- topped off with enough cava to fill the glass and almost overfill it, but be ready to slurp the bubbles before they spill and I waste some wine
- and I’m always feelin’ extra fancy
*If you don’t know this about me already, I am strongly against using champagne in cocktails. Champagne should be sipped straight, and never blended. And I also don’t like to use prosecco in most cocktails (remember my Camperol Spritz?) because prosecco has more sugar than most sparkling bruts, and therefore creates a far sweeter cocktail than I ever desire.
SO. I always use cava in my sparkling wine cocktails… it’s a Spanish sparkling wine, you can get yummy bottles for as little as $10, and it’s very dry and crisp – making it the perfect blending base for any cocktail!

Love this! And I’ve been trying out this simple apple cider cocktail which I’m planning for Thanksgiving: equal parts fresh apple cider and brandy on ice with just a few drops of Pimms (I had a lot left over from summer). Stir and garnish with a thin slice of apple.
