I rarely do this…post someone else’s recipe, I mean. For one thing, I’m incredibly stubborn and often don’t follow recipes at all. As for the other thing, I have this Superman complex where I think only I can create such delicious, unique recipes. Dumb. So incredibly dumb. Of course, I know that’s not true. If I were the only one who could create such delicious, unique recipes then wouldn’t I be famous? Still, even though I know I’m incorrect for thinking these things, I think them anyway. I believe you could thank my father for that. It was he who told me, at a very young age, that I could do anything, beat anybody and always win.
I stumbled upon this cookie recipe the other day while browsing through all the other food bloggers that I follow. This one comes from Bo at ‘Bo’s Bowl’. He always has great recipes and this one in particular spoke to me. I followed the recipe to a T (aren’t you proud, mama?) except that I used butter flavored shortening and I made mine about 3 times the size that Bo made his. I don’t like crispy cookies so I used a large soup spoon and heaped a giant amount of batter onto it before placing it on my un-greased cookie sheet. I then flattened them a bit with a fork before baking them for around 15 minutes until they were still soft but lightly browned on the bottom. (These cookies do not spread, so they can be placed close together on the sheet). His recipe yielded 6 dozen and I got about 30. (OK, so not exactly to a T but close, right?)
They were soooo good. Chewy, dense, kinda like a Pecan Sandie made sweet love to an Oatmeal Cookie. I do hope you check out his blog and give them a try. I have a feeling I will be making these again very soon…my father hasn’t tried them yet.

Abbey…Thanks…I'm glad you liked them…I'm really tempted to make them again, but add a little peanut butter.
No problem, they're really awesome. And I think peanut butter would be great in them.

These cookies looked so good. I asked Bo what he thought about using half butter (for flavor) and half shortening (for texture) and he told me he used butter flavored shortening. I see you did that also. =)
