January 25-31 Mealplan

This week I kinda went on a spending spree. I know, weird for me, right? But I’m so very excited and proud because I made my money go FAR!! I spent $100 at the grocery store and saved $120 where I bought a case of craft beer, tons of meat and produce to use both this week and to freeze for later, some goodies for the kids, lots of pantry staples, some dairy, high end toiletries, several items that gave me free Redbox codes as an added bonus, and some cleaning supplies. Then I took the kids for an impromptu trip to Target to get them a little prize and I left with bags and bags of stuff for me that I found on clearance!! So not only did the kids get their prizes but my toddler daughter scored 2 pairs of boots and I got 2 pairs of high heels, (one of which has so much glitter and a heel so high that it deserves a stage), 3 fedoras, a pair of leather gloves, some work-out pants, some make-up, a suit jacket, 2 pairs of sparkly leggings, and a silver clutch…and it only set me back $50. I tell you, if it weren’t for clearance racks I’d be naked.  So I’m feelin pretty good right about now and very excited for the weekend to come.  


Here’s what we’ll be eating this week…and I’m almost positive that I’ll be cooking in my sparkly platforms.

*Beef, Brown Rice and Bean Burritos with Guacamole


*Breakfast for Dinner! Sweet Potato Biscuits, Soft Scrambled Eggs and Crispy Bacon


*Roast Chicken and Root Vegetables 


*Herb and Dijon Crusted Pork Tenderloin with Roasted Broccoli and Sweet Potatoes


*Split Chicken Breasts with Sautéed Peppers and Onions and Barley Salad


*Wild Mushroom and Egg Fettuccine
