These Cucumber Margaritas almost make me wish they were just called Margaritas…
They’re just so good. And refreshing.
And good.
(Did I say they were good?)
THE CUCUMBER MARGARITA
In a blender, puree the following…
- 2 standard cucumbers, (or 1 large English cucumber), peeled, seeded and chunked
- 1 cup fresh lime juice (8-10 limes)
- 1/3 cup agave nectar (+ more to taste if you desire a sweeter cocktail)
- 1 cup tequila blanco
Once pureed smooth, chill and pour over ice (you can absolutely strain if you don’t like the slushy-like consistency, but I enjoy it… also, I’m getting some fiber so it’s basically a health drink).
OR you can add ice and make ‘er a frozen one! This will dull the flavors a bit, so feel free to adjust to your liking.
Garnish with a cucumber slice, if desired.
(The blending of the whole cucumber is my way of ‘juicing’ a cucumber… you can certainly pull out your electric juicer and get a pulp-free and thin cucumber juice for these. And then clean that damn thing. OR you can just do it this way. Your call.)
Either way, this sucker is fan-freakin-tastic.
