Tequila Chicken, Slow Roasted Red Peppers and Guacamole Rice

Holy Moly…. Guacamole Rice=Amazingness. It’s really just an awesome excuse to eat guacamole with a fork. The chicken was pan-seared and slow roasted, as was the peppers, onions and tomatoes. I finished the chicken with a good splash of tequila from my glass and a squeeze of an orange. Here’s to new homes!
